azuki beans are, as the name implies, the "small beans" with many therapeutic properties and strengthens the kidneys regulate and facilitate the functioning of the intestine and, if eaten every day, regularize the menstrual cycle (eliminating pain, cramps, etc) *. Being vegetarian I
, legumes are part of my diet in all seasons, although winter is far more easy to swallow (see soups, rich sauces, creams ,...); so I thought this dish, where the lemon and ginger dnno a fresh touch to the usual beans.
Ingredients: Thai rice
azuki red
grated lemon peel 1 teaspoon grated ginger
onion cream of peanut oil and salt
Cook the rice for consumption (I Rosolo first with olive oil and onions, then covered with hot water, saloon when it reaches a boil, cover and put the flame to low), while Fry the onion and some oil, diluted with water for cooking azuki do not burn (fat must be cheap because then you put cream and peanuts!). Grate a small piece of ginger and lemon zest, then add the cream, peanut butter and then the beans (already cooked, of course:)). For the presentation
oleare a bowl and press well into the rice, wait a bit (do not know whether it is necessary, but for fear that you do not transform well I've waited a bit ') and reverse the center of the dish and arrange all azuki around the rice and garnish with a little 'of lemon peel.
